Had some Waitsburg Whiskey Oola a couple of years ago and remembered enjoying it. Recently got a bottle as a gift and revisited it.

Nose is thin with slight oak aroma present. The flavor is, however, very full. Has a definite sweetness to it at the onset. That sweetness, tasting much like dried dates, then flattens out to a slightly hot but pleasant finish. Oola blends it’s own mash bill bourbon with other bourbons to develop the flavor profile. I really like this and its made here in the PNW at the Oola Distillery in Seattle. I rate it at 84.
